Earl Grey Tea, Blueberry and Lemon Cake

I'm in the "baking trance" since few day now, it's only Wednesday and I already baked four cakes (you should try this one). I have so many amazing cookbooks lying around, and so many printed pages marked with colorful stickers, I think  the time has come, to try all the recipes (yay!), and spend all my saving on the ingredients, ha (berries can be really expensive)! I guess I wont be buying that nice shirt I saw in Mango the other day...




I like to try the funky recipes, or the ones which call for some kind of weird ingredient. This gorgeous cake isn't too funky, but it brought my attention due to flavors combination. I've tried various Earl Grey tea cake recipes, but non of them had such a deep Earl Grey flavor. Here you mix in  freshly brewed tea and the tea leaves into the cake batter. Tadaaa! Now you know the secret.  

Pine Kernel Torte with Mascarpone Cream


After making an amazing Watermelon Pudding Tart, today's recipe is another proof that Italian cakes and desserts absolutely rock. I don't have to mention Tiramisu, right (OMG!!!). I'm talking about Torta di Pinoli con Crema al Mascarpone, a very easy to make, pine kernel cake. Perfect for autumn tea or dinner party. Its has wonderful moist texture and light nutty crunch. You can serve it "a la nude" dusted with just a little powdered sugar, or as a more festive dessert, filled with delicious mascarpone cream. Either way, the cake is really delicious.

Pumpkin Cake with Quark Frosting and Raspberries

New, fresh face of a pumpkin dessert! This not wintery at all cake, with a good hint of an orange zest, very fresh and light frosting takes one of the first places on my top ten list of cakes I absolutely love. It is a wonderful after dinner dessert.

Semi Dried Tomatoes in Olive Oil



Lately I have been obsessed with semi-dried tomatoes in oil. Sweet and garlicky with a nice hint of basil. They have become my new thing, I simply love them. I think they perfect in almost any dish.
You can toss them in pasta, have as a side of an omelet, or on top of a open, goat cheese sandwich.  You name it! I've had them also in a burger and with veggie fritters. Basically, sky is the limit!

Greek Style Hand Pies with Cheese (Tiropitakia Kourou)


I think this is one of the classic baked goods, that you can find in almost every bakery around Greece. Light and flaky pastry with a heart of cheese filling. There many different recipes of kourou but all are equally delicious. Classic version hides inside feta cheese filling,  however, a mix of other cheese like anthotiro, xynomyzitra, goat cheese or even fresh herbs takes the pies to another lever.
