Carrot Beetroot Cake with Dulce de Leche Cream Cheese Frosting

 

 
Couple of weeks ago was my parents 40th wedding anniversary, and even if we are many kilometers away from each other I decided to celebrate with them! But hey, what is the wedding party without a cake, right? I wanted this to be very real, so a I called my Mom and I asked what cake she would like have, she chose very simple Carrot and Beetroot Cake.

Veggie Burgers


One of the things, or actually the only one, that I really missed since I stopped eating meat, was the burgers. That magic moment when you bite into a toasted bun filled with deliciousness! Glorious sandwich accompanied by hand cut fries and a cold beer. This for me, is the comfort food all the way...

Vegan Mayonnaise (Cashew Nuts Mayonnaise)


Have you ever tried a store bought vegan mayonnaise? How weird this thing taste? Plus, all the strange ingredients it contains. As I always say, home made stuff taste much better (ha, I sound just like my Grandma). Cooking or actually mayonnaise making in this case, is not a rocket science, it is actually fun! I'm telling you, TRY!

Crostata al Gelo di Mellone (Watermelon Pudding Tart)

 
Since the day I posted a photo of the Watermelon Tart on Facebook my email notification alarm didn't stop beeping. Everyone wants to know the secret... Well, there is no secret, and the very impressive and complicated looking tart its really easy to make. I am not a creator of that masterpiece (...I wish), the original  recipe comes form the book - "Southern Italian Desserts", and believe me I felt exactly the same as you when I saw the photo of the tart on the book cover. That was actually the reason I bought the book, I even didn't look inside, I just grabbed it and went straight to the cashier , ok maybe I stopped for few minutes next to Middle Eastern cuisine section, but these books are always so colorful, you simply can't pass by them without taking one home.
